Mama Maria’s Black Beans
Ingredients…
-16 oz Bag of Black Beans (NO canned beans...that is NOT the same)
-3 Potatoes
- Fresh Sofrito (1 lg onion, 1/2 reg pepper, 1/2 cubanelle or green pepper sliced, and plenty of minced garlic)
-1 10 oz can of tomato sauce
-Chorizo (optional)
-Smoke Ham Bone (optional)
-1 packet of Sazón Goya
-Fresh Cilantro
-Olive Oil, Salt & Pepper to taste
The Process…
Set pressure cooker to soften 1 bag of dried black beans in water (usually add a smoked ham bone for flavor but it is not required for delicious beans)
In separate pan, sauté chorizo and sofrito, add 1 10 ounce can tomato sauce and then throw combined ingredients into beans (may need to add some water since beans have soaked most of the liquid in pot)
Peel and cut 3 small potatoes approximately 1 inch square and add to beans (potatoes in beans are used to thicken consistency)
Add 1 small Sazón Goya envelope
Throw in bunch of cut cilantro (some prefer the taste of bay leaf)
Sprinkle olive oil and salt and pepper to taste. After about 30 minutes, when your potatoes are fully cooked and softened, your beans are ready!
Serve with rice, quinoa or as is...but if you want to eat like a Cuban, eat them with white rice and platanitos (sweet plantains)... And enjoy! :)
